I would use your recipe as is, im assuming, smoke at 225f for an hour then crank it to 275f till its almost fork tender. Throw on some parm to finish the last 20 minutes. Upper rack works best to get some top down heat at the end. We slice the taters super slim on the mandolin for this. Oak wood.
