I have this problem, too. What helped for me is always having easy to make comfort foods in stock, forcing myself to eat first thing in the morning, and if I haven't met my calorie goal before bed, I make sure to stuff myself before I go to sleep.

In the case of my mom, I've tried teaching, for years... It just goes in one ear and out the other, and I end up getting asked to just do it for her. I feel bad for any support folks my mom talks to, because despite my efforts, she's ignorant, demanding, and rude.
