fwiw, having made gf doughs in my mixer, I really don't think gf dough is going to require hp motor.

I've had the 4.5 qt tilt-head model (2005-2018) and the 6qt lift model (2018-present). the tilt head ones are a nightmare to clean and the bowl is a bit small; the 6qt lift is perfect. I cannot imagine a reason you'd need larger than 6qt or something more powerful than the standard 6qt model.
