again & again, I find the color difference between the gray wholegrain rye flour with water and the beige, almost rose colored sourdough starter fascinating 😀

the natural yeast not only changes the color, but also the consistency 🤓

roggy has developed well quickly, so that this morning, after just one week, I made a pre-dough, and then made a bread dough in the evening and shaped the body 🥖

starting a new sourdough
with 25 g of wholegrain rye flour
and circa 30 g of water

mix, cover & let set until tomorrow
then I’ll “feed” it roughly the same amount
repeat for 7-10 days (maybe go down to 15-20 g)
until it smells a bit like a sour apple
