I got my Ms Kitt when she was around 1 year old maybe a little younger with FIV, a few years later she wasn’t testing + any more & she lived to about 14 yrs old. We miss her!

Probably one of the best Gen X references I’ve seen. Loved “Eddie & the Cruisers” & had the soundtrack on cassette & vinyl.

One more suggestion- warm the buttermilk to room temp or microwave to take off the chill.

The original recipe also had vanilla & nutmeg but was not liked by my kids at all so not in my version.
I think the AP/whole wheat combo is key. And real buttermilk, not powdered. (Have tried that too)

My challenge is always to let the griddle really heat up on medium and to be patient when cooking the first side. Can easily be doubled.

Mix dry ingredients in 1 bowl. Mix eggs, then melted butter & buttermilk in other. Pour wet into dry, mix, let sit to bubble a bit (10-30 minutes). When ready to make pancakes add water to consistency you like. I used a nonstick griddle over my middle but we or front & back burners.

1 c. AP flour
1/2 c. While wheat flour
Salt to taste
1 tsp baking soda
2 tsp baking powder
2 eggs
3 tbl butter melted + 1 tbsp for cooking in if prefer
1 1/2 c buttermilk
