Ouch but it should be worth it, especially how oil sort of vaporizes into the air when cooking. I really wish it was more of a standard installation in houses, or at least the frame work to make it easy to install.

It's fascinating, I kind of want to try making one myself. I wish I still had my table saw but I could probably borrow one, make a guide to router the corner for the books, a rig to clamp the plywood to let it set in the right angle, hmmm

Are you looking to sterilize the equipment, or for something like a campden tablet? If the former, theoretically hot water and dishsoap is fine but you can always see if there's a local home brew store around that carries some Starsan or similar
