Another alternative is to cut the thighs, legs, and breast off the bone and roast them on a sheet. Then you can take them out separately based on temperature since they are all done at different times.

I cook mine in my Green Egg. But I spatchcock it, cut the backbone out and splay it out. Brined, ~300 deg, then crank the heat up to crisp the skin.
