Meddling from the outside has rarely done anything good for a country.

Building a movement strong enough to overthrow the system without outside meddling is a necessary step to make sure you have something strong and coherent enough to put in its place....

The NATO member parts of Europe are more than capable of defending themselves already, so no, when we more than double our military budgets, it is obviously not a matter of defense, but of establishing dominance.

The only people who benefit from this arms race is the US and EU military industries.

You are talking about Europe as if it were one political power which it is not. European NATO member countries on the other hand have been busy as aggressors since WWII. And while NATO or "Europe" were never invoked as formal belligerents, NATO networks, weaponry and expertise certainly has.

Russia will not accept a NATO expansion in their previous sphere of influence, and have been very open about that. You can say that should be each country's own choice but that has never been the case anywhere. NATO insisted and duped Ukraine into thinking they could win a war over this question.

Your question is built on at least one false premise: that there is an imminent risk of Russian aggression against the rest of Europe, and that NATO can in any meaningful sense be said to be on the defensive relative to Russia.

I recommend you look deeper. There is a pattern, but it's not "Putin loves wars".

Even if we assume, for the sake of argument, that Russian aggression against main Europe were a major threat, we already outnumber and outgun Russia significantly. We don't secure peace by chasing dominance.
