I'm voting Jade. I'm a Jade fan and she ended up being scrapped from the Halloween project so I say Jade.

Were there any casting choices that almost made the cut? Like characters that someone had a great idea for but ultimately decided to give to another actor?

(just to clarify, this isn't counting scripted battles, or other such cases where music from a prior cutscene carries over into the fight, like the castle escape sequence in FF5)

FF4 had normal, boss, final boss, plus a second boss theme for the Archfiends and stuff.

And then FF5 had normal, boss, final boss, Exdeath's battle theme and Gilgamesh's battle theme.

(of course the remakes of 1 and 2 added more boss themes which were much-needed. But yeah, fun how that lines up)

So FF1 just had the one battle theme, FF2 had the main battle theme and the final boss theme (not counting the scrapped Battle 3), and then FF3 had the main battle theme, boss theme and final boss theme.
