I’m still trying to figure out these sourdough sandwich loaves. I had yet to get a perfectly square Pullman loaf, but these were pretty close!

Also made chili and baked some cornbread yesterday!

Okay as expected, it’s a little less airy, but far from dense. Definitely more sour. A great loaf! A worthy experiment. I think I’m a little more partial to yesterday’s, but it’s very close.

Looks nice on the outside. I expect the inside will be a little less airy due to the lesser expansion. But we’ll see in a couple hours!

A little early morning bake. Doing a smol experiment. I usuallly cold ferment overnight (this was in for about 16 hours), but I prepped two loaves. Gonna let the other sit in the fridge until tomorrow morning. That’ll be about 40 hours cold ferment. Interested in finding out the effects! #breadsky

Big baking weekend. Brown steakhouse style bread for my Dad (did a test Friday night, real deal Saturday), Sourdough and baguettes today!

My dad loves that dark brown bread they have at like chain steak houses. The almost but not quite pumpernickel stuff. Did a quick recipe test tonight so I can give him some for his birthday on Sunday. Turned out nicely! #breadsky

I did cinnamon rolls (with some sourdough discard + overnight cold proof. Very interesting texture!) and some tartine batards today. #breadsky

I tried a mozzarella and Sun-dried tomato loaf. Lamination and Shaping was a mess, so not as much oven spring. Ingredients are not well distributed. Tastes fine, and well-fermented, but definitely this loaf needs work. Not as easy as the jalapeño cheddar one was! #breadsky

I’ve been making the Tartine country loaf for a couple months now, after years of yeast bread baking. They’re really turning out nicely so far!
