subprimals vacuum packed in bags and packed in easily handled boxes, usually 50-80 lbs. Subprimals are basically cuts that have been cut and trimmed at a slaughterhouse so that meat cutters at retail stores dont have to separate anything and pretty much just slice them up into steaks or roasts
