It helps to just think of it as a really big chicken. And to pregame by watching Sohla’s dry brine/roast whole turkey video eleventy-nine times. I probably could have gone a touch heavier on the salt, but it looked purty and it was moist. And now I can sleep soundly knowing it’s done and carved.

As a Kentuckian, Afternoons With Andy (and Miss Virginia, the ASL translator for most of the press conferences) were a bit of a wholesome bright spot during 2020 and the Pardon My Language meme with his photo never fails to make me grin.
