I'd suspect it has something to do with needing to account for it in every animation, every situation, every clothing piece (especially hats), etc.
Like, Pokémon Z-A has a small side-ponytail that can reasonably disappear under a hat, but any longer and you'd start to wonder where it all went.

Honestly, same; that's why, for as much as I've messed around with Figura (a Minecraft mod that lets you make and import custom player models and animations) in my free time, I've rarely ever made a death animation for any of my original characters - the closest I'd get is a large fall recovery.

To be fair, all of my digital art is done in PiskelApp, which is designed for pixel art, meaning there's no anti-aliasing tools to speak of.
