Brisket is an adventure, just stick with it. I tend to go 4-5hr super smoke at 225, then wrap and cook at 250 until it hits 200ish. Usually takes 10-11 hours

Yea, happens all the time when I'm doing brisket but first time I've had the turkey do it in multiple runs. My main concern was just things starting to dry out on the edges while the center got up to temp but ended up fine

I've done this exact thing twice before and it's been perfect each time. People that don't even normally eat turkey (like my wife) love it

Last year I had literally zero turkey left though 😭

No stuffing, my wife is paranoid about poultry so we're a dressing house

Brined 24h with Kinder's brine mix. Compound butter of garlic powder and poultry seasoning worked under the skin, Kinder's buttery poultry blend on top of the skin, and basting with butter
