The sour taste component is likely due to oxidation of water at the anode during electrolysis. This generates protons that can be directly sensed by taste cells through H+ activated cation channels. But that's just my guess ;)

Congrats! This is really cool. Very nice paper with lots of thorough analyses and important side findings.
It is also a great use case for BiPOLES. Something we have envisioned when designing this tool.🙌 Well done 🙌
