The chillier weather means it's time for comfort food. Vegan aubergine 🍆 lasagna... Packed with lentils,tomatoes, aubergines, celery, carrots and bell peppers it's a nutrition bomb 💣 as well as gooey deliciousness 😋💚

Apologies I've been quiet lately, but took a week of solitude and digital detox to walk around the Cornish coast from Newquay to Penzance. It was challenging, but I loved spending time getting to know my real self. Lots of scenic photos to follow, in sequence of the walk days...
