Yes it’s part creamy and you make some croutons out of part of the polenta.

A family member was diagnosed with celiac disease a few years ago. This is our favorite gf stuffing. The gf breads just aren’t our thing. We sub in sage sausage and all the thanksgiving flavors.

This stuffing uses polenta two ways—half of it is left creamy, while the other half gets browned, for a nice contrast of texture.
