I also say be careful with one pace. It does its job by keeping scenes only in the manga, but it cuts out SO much of the adventure. It helps, but also hurts.

Pacific rim and Evangelion come to mind! I’d recommend Gundam, but idk enough about it and alot of it is politics before you get to mechs 😅 Love Death and Robots has a cool episode about farmers in mechas!
