Ah, my favorite fusion in Tokyo was a place in Ebisu that served Korean-Mexican fusion, though they're not around anymore. Other than that it's mostly high-end (as you said) French-Japanese or Italian-Japanese here.

I think they're just called "Illumination"? And yes, T-Market is still very popular and worth a visit. It's nice that they have places where you can just sit without buying anything.
