might i make a suggestion? write a set with just a single gameboy, go for simplicity.
all my works get done with just the one because that’s all i have, and honestly i find the more limited approach liberating

2x isn’t uncommon to see at live shows, i imagine if you’re just using the two gameboys that’s maybe three cables tops

if you’re emulating all of this you should have no trouble, i know a lot of emulators support opening another window and linking the two

if you’re seeking something more like a daw that’s also a tracker, give renoise or openmpt a shot!
Famitracker is how i got my start tracking so it’s really fun, but working with the nes limitations when you’re used to a more daw-like environment with samples and stuff might be a challenge
