Answering my own question - How you you get R Studio to default to a specific directory for open new projects? Under Global Options from the Tools menu, Click on General then Advanced which brings up this nice box. Don't forget to "Apply" it to save it

I planted this rosemary about three years ago with just six cuttings from a neighbour's plant. It is well over two meters tall now. Dad uses it as a windshelter
