Having a shit ton of baking to focus on helped me not get super stressed about the holiday. I had a plan that I was able to execute, and while Wed was a marathon baking sesh, I enjoyed it, and I'm looking forward to improving upon my performance this xmas!

Freezing biscuit dough was hit or miss. The individual biscuits I made in the air fryer turned out well, but the batch I baked in the oven were way overcooked. This is worth experimenting with b/c, hello, I CAN MAKE FROZEN BISCUITS IN MY AIR FRYER ONE AT A TIME.

1. Prebaking the gingersnap crust for the NY Times Pumpkin Cheesecake Pie is a big mistake. I omitted that step this time, and the crust was perfect.
2. NOT prebaking the pie crust for the King Arthur Pumpkin Pie is also a mistake. May have to try Sally's recipe next time.
