Again if you look at masterworks you will find that subtle value defines the planes, not lines. Harsh shadow helps make a defined structure but this is rare in the majority of lighting.

Because most people do not have the Asaro jawline, and when you imitate that blocky structure on regular people, it's going to look messed up, so you kinda just have to do something acceptably in between right and aesthetic. Values are 90% of the legwork too.
