Firstly, the opposition was not such that it caused major problems, thus there was not a huge "need" to replace or remove the judiciary aside from mentioned examples. If the great majority of judges were mostly subservient and most cases went the way the party needed, why oppress them.
Graver however sees a more general explanation in the path dependency of institutions and their resistance to change. German law is part of the Western legal tradition, and the conception of an autonomous legal order is deeply ingrained in centuries going back to the middle ages. Actors in different positions within the Nazi State acted out the contradiction between the force of tradition and Nazi dogma, especially here the ministry of justice.
Another point is that the Nazis to a large degree could opt to operate outside of the law, as explained in the "dual state" idea above. Thus the Nazis defined areas where they operated as a normative state under normal rule of law and where they operated as a prerogative state that could do what it wanted. Limiting the prerogative state to where it was absolutely necessary was beneficial and necessary to the normal functioning of a market economy.
