While I don’t believe that youth is wasted on the young, old age is afforded to few. My elders are often key in my education. I treasure their knowledge & experience, anecdotally or otherwise.

We can all still learn & teach until the moment we shuffle off of this mortal coil; sometimes even after!

Granted, that’s a lot of meat & dairy, but the bulk of our meals generally revolve around some fermented/pickled/preserved foods, plus whatever is in season in the fields.

We have layer & meat flocks now. Looking to expand to mammalian husbandry soon…

Indeed!

We just had a big cassoulet session with our 3 beans in our “Road to Rhône” dinner! Collards with pickled radishes/bread & butter baby fennel. Savoyed spinach salad with sous vide soft eggs, house made lardons.
Beef bourguignon. Gougeres with Tomme. Caramel 🍎 galettes with Bavarian cream

It’s because I left the restaurant industry & finally made my way into a high-end, farm & food preservation focused career. I do sometimes still cook & put meals on plates for money, but that’s not the main focus.

I’ve held chef titles before. Not in it for fame/prestige. In it for the food.
