At the risk of contradicting John Pizzarelli -- for most things, I do like Jersey best -- best turkey I ever have was deep-fried (not as greasy as that sounds) in Fort Worth, TX. Cooks in a cannister in 45 minutes. You just have to be careful to cook it outside in case it all explodes.
