Got onions going while the herbs finished frying. I should mention that I'm making this roughly from Bottom of the Pot's recipe, but I'm skipping the meat because frankly the beans and herbs are my favorite part and I couldn't be bothered to prep one more thing.

Today, I finally chopped all the herbs (except the fenugreek since I was using dried instead of fresh). Honestly, nowhere near as big as the herb pile my grandma always made for this dish - I'm curious to see how many leftovers come out of it!

Our journey began last weekend, when I bought an armful of herbs and then had to wash, dry, and store them properly until their big debut. (Dill in the pic below was for baghali polo. Other herbs are drying off screen.)

I started a short Farsi course two years ago in the hopes of learning more than the few words from my childhood. Then life came at me hard. I put it aside for a very long time.

A month ago, I started over and now here I am. It's a pretty small thing but it has brought me a lot of joy ❤️

After simmering the beef with some hot water for 30 mins, almost everything else goes in: tomato paste, saffron water, the yellow peas, a bit of lime juice (we didn't use limoo omani when I was a kid so fresh lime goes in instead)
