For starter I use 2.5 tsp. Active Dry Yeast 1 tsp honey dissolved in 2 warm water 5-10 minutes
Bake in the 425 preheated Dutch oven for 35 minutes then remove the lid& top with that remaining handful of filling, mist loaf generously with water, bake for another 10 minutes, I 400 with convection on.

3/ Dough
I use
4 c white flour (to +++ fibre I sub 2 c with Durum White Wholewheat Atta flour)
3 tblspn Gluten Powder
1 & 1/2 tsp salt
Filling
Up to 1 cup of your fave cheeses grated mixed w pinches of garlic & onion powder, fresh or dried herbs.
A bit different every time, depends what's around.

2/ Turn the whole thing over & roll flat again, sealing in the filling, & spread all the remaining filling except for a small handful. Now roll in from each corner until the filling disappears, turn over & shape into a boule. Place on parchment, cover with a towel & heat oven (& Dutch oven) to 425.

I like kneading dough & hate waiting for hours & hours for the dough to rise. This one takes 90 min for the 1st rise, then I knead the dough 2 more times at 30 min. intervals. After the final rise I roll out the dough to @ 12" x 12" square and spread out 2/3 of the filling. Roll in from each corner.

I stopped with making Pumpkin pie switched over to Pumpkin Cheesecake. Sooo much better!!!
