I stress-cooked a “shingled” ratatouille riff and *thought* it was the single most delicious thing I’d ever made in my life

But then! I layered the ratatouille on fried polenta slices and topped with a fried egg and y’all. Y’ALL. (Also I grew those herbs myself, please clap)

The vegetables are topped with tablespoons of chopped fresh herbs- oregano, thyme, basil, rosemary. Not so secretly- underneath the vegetables is a sort of “piperade”- made from mixing tomato paste and herbs into a premade rossted red pepper sauce. This shot was right before the dish went into the oven
