Pie dough. Divide flour into 2/3, 1/3 portions. Mix dry ingredients. Pulse butter and dry mix until shaggy, add remaining flour, pulse 5x, mix in water with rubber spatula or rice paddle. Wrap and chill for 2hrs. Recipe from Kenji Lopez-Alt.

I can’t believe it took us this long to finally eat at Rinka. Everything was delicious, but you definitely need to commit either to teishoku OR Ala carte. That teishoku is a LOT of food. The abalone kamameshi was real nice. Perfectly tender and lots of other goodies.
