I do like Paul Bert! When I have been I have just walked in,but maybe I was lucky. I find going in person to book for a future date works best in France. And I avoid restaurants where you need to queue- often the case in Paris.
PS I rarely eat desert but the Paris- Brest at PB really was excellent!
