Tinned fish setup of the week is Littleneck Clams with Confit Garlic and Chile de Árbol in Olive Oil. They're my personal favorite of our tinned fish selection. The clams are single-origin from Cherrystone in Cape Charles, Virginia and tinned by our friends at Island Creek.

I often ask chefs what their favorite “less famous” dish is. Jack says Panéed Venison with cracked black pepper country gravy doesn’t get enough love.

“A wonderful not-too-gamey flavor and mushrooms in the gravy. Pairs excellently with a side of mashed potatoes.”
