I do love Jaylah though, and had they made a fourth Kelvin film, it would have been nice to incorporate her into the crew. No one could replace Anton, and plus with it being an alternate reality, the crew of the 1701 could have a future with her.

Exactly! They don't care about canon. To be fair, there is a prototype holodeck called the "recreation room" in the TAS episode "The Practical Joker". They don't go into much detail, but it was essentially a holodeck...but it was 10 or so years after Pike's command! Also wasn't called a "holodeck"..
