I haven't played all of these. Will have to change that.
I really liked Sonic and the Fallen Star. Had a sort of interesting zig zag verticality to its level design, and the visuals and both soundtracks are gorgeous.

It would be nice to see 2 and 3 remastered.
Closest thing we have is from the fans; the Primehacks fork of Dolphin and texture packs. Of course that's no good for the typical consumer but it's still neat.
