I really wonder if this is just because of being a WIP appearance (void elf have white / black-colored blindfolds in the files, NYI in beta/PTR, and supposedly void tattoos in bluepost), or if it's just another case of unique NPC stuff. I mean, she is wearing plate armor in her first appearance.
I found textures that are very likely work-in-progress versions of the Void Elf demon hunter extras. A few colors have changed between them, notably turning it black / silver instead of blood elven red. These aren't currently implemented in alpha. The rest of the options are the same as blood elf #⛏️
