Seems odd to me that they wouldn't be doing things efficiently under the hood, but if you've tried it and found it wanting then fair enough. You can LineRenderer.BakeMesh() too, so it wouldn't need to be working hard every frame.

I'd use LineRenderer and assume Unity's implementation of it is efficient enough for most purposes. You could use a single LineRenderer to render all the points in this vid, or have one per surface or whatever.
