Cake trimmings with mango & raspberry jams to preview the flavors before layering the entire cake. (raspberry jam is still cooling so it'll be a minute).
The cake is the center of an entremet so the entire thing will be encased in a white chocolate coconut mousse.

JFC it's already a shit show at work. A diff team got a dev request in July of last year and never sent it to me or tech to actually do the dev and now the client expects it Monday.

Nothing like being on hold for 40+ minutes, while also in a chat queue, first thing in the morning. At least I finally find out that it's a system wide issue & Delta hasn't said "fuck these guys specifically" when trying to check @theotherbfg.bsky.social and myself in for our flights tomorrow.

Teaching a baking class (bouche de noel) next week and did a trial run of the recipe to make sure 1) it worked, and 2) I thought it could be done in the time allotted. Worked great except I rolled the cake the wrong direction (short side to short side) so it ended up more of a stump than branch 🤣
