So this is a misconception by a lot of people at this time of year that they have seen a stag.
Almost definitely what you saw ( I’m assuming you were in the FoD) was a fallow deer. The male being a buck and the female a doe. The same applies to Roe deer and muntjac.
Red deer are Stag and hind.
