I have personally been to at least FOUR El Parasol locations and I concur! My fave thing to order is the Pork burrito (add guac) from the original location (really just a tuff shed structure) in Española.

Haven’t heard the new box set yet but maybe they were SO lofi there’s not that much that CAN be done? Plus, I love the at times warpy tape noise. Long live the ‘Mats! (So happy to have found you on here, to!)
