Made my first potato-rosemary sourdough bread. Mostly happy with the outcome, but next time I’ll be a little less careful with mixing after addition of the potato. The potato pieces were larger than what I was aiming for.

Had a chance to see a drone light show recently with string quartet in accompaniment. I really think drones should replace fireworks, so much potential. Less pollution and animals will likely find it less stressful.

We are spoon deep into gazpacho season, so I made another loaf of Pan Candeal. We like this bread the best for gazpacho. It is made with a very low hydration (50%) and I make it with half bread flour and half semolina flour.

Tried a new sourdough bread recipe using bread flour and semolina. It had a very high hydration (84%) and never really gained any structure. When I turned it out of the form before baking it went straight to puddle. Nonetheless, it turned out OK albeit a bit flat. Good crumb and nice flavor.
