Charlotte's still pretty immigrant heavy. Entire sections of the city are major vibrant Hispanic/Latino communities or Vietnamese communities to a lesser extent. It's just not as big a part of the city's outward facing cultural identity the way it is for some other big diverse cities.

Our family realized at some point that we prefer chicken anyway so we'll just do like 2 chickens and everyone is happier anyway

Maybe the better way to put it is it's more about who can pay pushing out people who can't. If I make enough to pay $2000 a month and there's low supply, they'll often charge how much people like me will pay to get as much as they can from whoever's willing to pay it

It's only profit if someone exists who is able and willing to pay it

(not super often but often enough I wouldn't be able to not have one)
