It does have that dried flavour, I like to throw them in a mortar and smack them around a bit to release more flavour and then quickly sautee them, it makes it a lot less hayish

Sometimes, it's not as good as fresh, but it plays its own role. I like using them in recipes that take a long time and sometimes supplement it with fresh at the end so that there is notes of flavour all throughout. Also cheaper innit.
