Dinner tonight was chicken tortilla soup - served it with a cheese and black bean quesadilla. Made the stock from a rotisserie chicken carcass. 🍜🍽️🫘🌽🥑🍗🍅🧅🌶️🥕🍋🟩

Just made my second batch of fruit mince pies. These will join the others already in the freezer. When we want them , bake straight from the freezer. Most will be given away.

Just made my second batch of fruit mince pies. These will join the others already in the freezer. When we want them , bake straight from the freezer. Most will be given away.

How bloody satisfying. Just had meeting with bathroom designer to review ‘final’ plans. Plans are incorrect and missing info. Plans weren’t produced by him.

Recipe calls for bicarb soda, but I don’t think any of the other ingredients are acidic. May try with baking powder next time. Looks like a brick!

After dinner tonight we had chopped apple cake. Wanted a dairy free cake - this one uses oil instead of butter.
Recipe calls for bicarb soda, but I don’t think any of the other ingredients are acidic. May try with baking powder next time. Looks like a brick!

Just pulled these cheese & coconut buttons out of the oven. Omg the aroma is wonderful. They have a pinch of cayenne for a bit of a kick. Very easy to make. Serve with a drink or just gobble them up. 🍽️🍜🧀🧈🥥

Spoke to my niece last night, she’s staying at the hospital with Kim. Kim doesn’t want a funeral, they’d talked about it in depth and it was very reassuring for my niece to know Kim’s wishes. So talk to your family, let them know your wishes. It’s a gift to your kids.

Two more Christmas cakes in the oven. Hopefully the last I need to make this year. That’s 8 in total.
These are boiled fruit cakes and only cook for 60-70 minutes, so relatively easy. Phew.
