Look up the pattern called 'Grandmother's Favourite Dishcloth'. It's a simple knit and you get a useful item at the end. It's 100% my go-to anxiety reducing knit!

My other favourite simple knit is called 'Hitchhiker' over on Ravelry. It makes a shawl/scarf that looks WAY fancier than it actually is
