So there won't be an ebook version for the foreseeable future. I'm very sorry, and I will continue trying to solve this problem, but it's currently out of my hands. 😞

Unfortunately, it turns out the problem with the ebook version is not just with markup – it's an issue with Kindle (and other ereading) devices. This is something I can't currently surmount.

Ereaders apparently do not currently allow for nonstandard charsets, so there's really nothing I can do.
