Being in Vietnam has proven to me that Houston’s Vietnamese food scene is truly top tier. Obviously some dishes do taste better here but honestly, not by much! And yes I’ve gone to smaller stands recommended by locals. It’s great but Pho from Pho Saigon is pretty comparable.
