Super Mario World was my first Mario game, it will always hold a special place in my heart. To this day I still remember every secret level exit and can 100% the game in a day if given enough free time. It's definitely on the easy side, but the vibe is just so cozy and it never gets boring.

I'd have to go with the Castlevania and Mega Man X series, with Symphony of the Night / Order of Ecclesia, and X1 / X5 standing at the very top of their respective franchises.
