I used 5 oz "Woozy" bottles. I'm not going to explain packing here, just the recipe.

Once fermented, puree in a blender until smooth then heat until then mash is lightly boiling
Finish with:
1/2c white vinegar
1/2c apple cider vinegar
Juice from two fresh limes
Bring just to a simmer again, then off the heat.

As many habaneros as you can get (I used 7 lbs.)
Two large sweet onions
Two heads garlic, peeled
7% salt brine (by weight) to cover it all
Pack everything into a breathable fermentation jar, weight the contents, put it in a cool, dark location and forget about it for two months.
