If you also want apple cider beef stew... behold, the recipe.
Cider Beef Stew. Prep time: 30 minutes. Cooking time: 8 hours. Ideal slow cooker size: 3 quarts. 2 pounds of stewing beef, cut into 1 inch cubes. 6 tablespons of flour, divided. 2 teaspoons of salt. 1/4th teaspoon pepper. 1/4 teaspoon dried thyme. 3 tablespoons cooking oil. 4 potatoes, peeled and quartered. 4 carrots, quartered. 2 onions, sliced. 1 rib celery, sliced. 1 apple, chopped. 2 cups apple cider or apple juice. 1-2 tablespoons of vinegar. 1/2 cup of cold water. 1. Stir together the beef, 3 tablespoons of flour, salt, pepper, and dried thyme. Brown coated in oil in skillet. Do in two batches if necessary to avoid crowding the meat. 2. Place vegetables and apple in slow cooker. Place browned meat cubes on top. 3. Pour over apple cider and vinegar. 4. Cover and cook on Low for 8-10 hours. 5. Turn slow cooker to High. Blend cold water with remaining 3 tablespoons flour. Stir into hot stew. 6. Cover and cook on High for 15 minutes or until thickened.

I ended up doing a pumpkin this year after all and I love it.

I think everyone should also read this book. Yes, even you!! 🫵 It's very short and very good, had a lot of the stuff I've learned in therapy.

Here's the recipe I used btw.
Notepad with a recipe that reads, "Tofu ground beef: 1 extra firm tofu, crumpled up. 3 tablespoon of soy sauce. 2 tablespoon neutral oil. 2 tablespoon water. 1 tablespoon steak sauce. 1 tablespoon tomato paste. 1 teaspoon Worcestershire sauce. 1 teaspoon veggie stock. ½ teaspoon of onion powder. 1 teaspoon of garlic powder. 1 teaspoon of paprika. ¼ teaspoon of ginger. ¼ teaspoon ground mustard. (Optional.) ¼ teaspoon turmeric. Preheat oven to 400 degrees Fahrenheit. Press or dry off the tofu. Whisk all of the spices and sauces together in a medium-sized bowl. Crumple the tofu by hand into the bowl, then combine the tofu chunks with the sauce mix, making sure the chunks are evenly coated. Spray neutral oil on parchment paper-lined baking sheet and spread the tofu onto it in a thin layer. Bake for 20 to 40 minutes. For taco "beef" filling, rehydrate with 1 cup water or liquid broth in a pan and cook it on the stove at medium-high heat until the water has been reduced."
