If I had to guess this is why it's such a common practice, at least in the gallery setting. I don't think I've ever submitted to an open call where the medium wasn't required info

Also process and medium gives context to a piece as much as the artist's country or birthday or the provenance of the piece. To see that group f64 photogs used silver for the clarity and tonal range, alt process revivalists contrasted old techniques with modern subjects, etc. is interesting to me

This is just one reason among many, and I can only really speak for photographers, but the print process (and paper type) is very important info for storage/display/preservation/restoration. Eg silver prints on resin paper have a different lifespan and needs than platinum prints on cotton rag
